These are super yummy, close to what Starbucks egg bites taste like and really great for meal prep (they freeze well). I have tried a number of recipes and compiled together to get this one that works well for me. The steam bath while they cook is key.
Ingredients:
- 6 eggs
- 1 cup cottage cheese
- salt and pepper to your liking
- cooked bacon crumbled
- red pepper, diced small
- cheese (whatever kind you like, gruyere, cheddar, monterrey jack)
- cook bacon (I like to bake center cut bacon in 400 F oven for 15-20 min) sometimes the night before so this is done
- Preheat oven to 350 F and spray muffin tin with oil spray
- Set a tea pot of water to boil
- Add eggs, cottage cheese, salt and pepper to a blender and blend until smooth
- Sprinkle bacon bits in the bottom of muffin tin (just so it lightly covers the bottom cup), sprinkle red pepper and cheese over the bacon
- Pour egg mixture over the bacon/red pepper/cheese
- I add a little extra cheese on top and lightly mix with a spoon. The muffin cups should be about 3/4 full
- Carefully prepare steam bath by adding boiling water to a baking sheet at the bottom rack of oven
- Place the muffin tin on the middle or top rack
- Bake for 25 minutes

I package up and put in freezer. They warm well in the microwave.
